24 Cze Cookie dough chickpea balls with cherries – chickpea pralines NO-BAKE & VEGAN
This recipe is one more proof that the chickpeas are ideal for desserts. These balls are just a few minutes’ work, and so enjoyable! Chickpeas are an excellent source of protein and many nutrients and very often guests at my table, in both savory and sweet versions. Chickpeas are a real kick of energy and vitamins! The high content of protein and fiber make you feel full for a long time and it will prevent snacking on unhealthy foods. The recipe is super-fast, especially when you go (like me) the easy way by using ready and tinned chickpeas from a can. Then the whole philosophy is to blend ingredients. It can’t be more simple than this!

Those flavors fit together perfectly! Sweet and sticky dates, aromatic chickpeas, energic oats, sour lemon, vanilla beans and chewy dried cherries. Epic! In regards to chickpeas, you will feel their taste in those pralines, it can not be hidden. Although I think it is definitely an advantage, and work for their benefit. Balls are easy to form, you can take them with you to work, school, picnic or bike. They do not scatter and retain their shape. Definitely worth trying! 🙂


Ingredients:
150g cooked chickpeas (about 3/4 cup canned or cooked by your own)
150g dates (1 cup)
150g oat flour or ground oatmeal (1 cup)
juice and grated zest of 1/2 lemon
1 teaspoon vanilla extract
pinch of salt
optional agave syrup or cane sugar to taste if the dough is not sweet enough for you
50g dried cherries
Preparation:
All the ingredients except dried cherries, place in bowl and blend until smooth and sticky consistency. If the mass is too dry, add a little water, it’s definitely easier to blend. At this stage, check whether the dough is sweet enough for you, it depends on the dates that you used. Sweet it up with your favorite syrup / sugar as desired. When the chickpea mass has the right consistency, add the chopped dried cherries and mix thoroughly until cherries are distributed evenly. Then moisten your hands with water and form small balls. Before each praline, moisten your hands, the dough will not be adhering to your fingers. Store ready-made pralines in the refrigerator. Bon Appetit!
