Veggie spring rolls with smoked tofu and peanut butter sauce

SPRING ROLLS
20 sheets of rice paper
4 handfuls of fresh spinach
1 cube of smoked tofu (aprox. 250g)
2 large carrots
1 large red paprica
1 raw cucumber
few green onions (green parts of the onions)
bunch of parsley
bunch of chives
garlic chilli sauce
SAUCE
3 tablespoons peanut butter
2 tablespoons soy sauce
1 tablespoon garlic chilli sauce
a few drops of tabasco
teaspoon of cane sugar

Instructions
Cut smoked tofu into thin slices and fry gently in 1 tablespoon of olive oil just until golden. Then cut into thin slices carrots, peppers and cucumber. Try to cut all of the vegetables at the same length, then spring rolls will look more aesthetic and appealing. Then cut the green parts of spring onions and parsley to the length of vegetables.
Soak the rice paper in warm water and place it on the board. Then put on paper 2 spinach leaves, green parts of spring onions, sliced peppers, cucumbers and carrots, a few leaves of parsley and chives, tofu and a teaspoon of garlic chilli sauce. Then fold the top and bottom part of the paper to inside and roll it up alongside in a narrow tube. Proceed until you use all ingredients.
Mix all sauce ingredients until uniform and serve with spring rolls. Bon Appetit!
