  • 400g spaghetti (I love corn pasta)
AVOCADO SAUCE
  • 1 large avocado
  • juice from ½ lemon
  • 2 Garlic cloves
  • bunch of cilantro (leaves only, no stems)
  • ⅓ teaspoon salt
  • ⅓ teaspoon pepper
  • ⅓ teaspoon chilli
  • ½ teaspoon smoked paprika
  • 2 tablespoons yeast flakes
  • green onion (green part only)

INSTRUCTIONSCook pasta according to instructions on the package
AVOCADO SAUCE
  1. All the ingredients for the sauce place in a blender and blend for smooth mousse.
SERVING
  1. Stir hot pasta with sauce and sprinkle with vegan parmesan cheese. Serve with cherry tomatoes.
