Today’s recipe is incredibly simple and incredibly delicious! The main ingredient of it is coconut, it’s hard to believe. Coconut butter can be used to spread the sandwiches, crackers, cookies, pancakes or can be added to the porridge. You can use it almost everywhere, but it tastes the best in vegan OREO from this recipe! Coconut butter is a great substitute for peanut butter for people with allergies. Coconut is the fruit which is very healthy and it contains lots of healthy fats and vitamins. It’s worth to consider coconut in your balanced diet.


I do not know why I haven’t done it before. I must admit that homemade coconut butter requires some time and effort. To ease blending, you can add a bit of melted coconut butter. Then consistency will be more creamy. If you have a strong blender, it will take few minutes and you’re done. If not, I advise you to add a little bit of coconut oil, it will be easier. Blender may become hot, but a little patience and it will ready. It is worth to mention that coconut butter should be prepared minimum out of 400g of desiccated coconut. If you have more coconut in your blender, it will begin to turn into butter more quickly. The more coconut shreds, the better 🙂


Coconut is rich in fiber, potassium, magnesium and phosphorus, as well as folic acid. But the biggest benefit to your health are saturated fatty acids. These are not the same saturated fatty acids, which are found in most animal products, or long chain triglycerides (LCT), which lead to high cholesterol and atherosclerosis. Saturated fatty acids contained in coconut are medium chain triglycerides (MCT), which are metabolized in a different way. Therefore, since their molecules are smaller, they are metabolized faster. It does not require the presence of enzymes that are involved in the metabolism of LCT fats, lipase or bile. MCT fats omit fat cells and are absorbed directly into the portal vein. As a result, they are not set aside as reserve material, but are quickly available energy source.

- minimum 400g of desiccated coconut
- (optionally melted coconut oil to ease blending)
- Put the desiccated coconut into a blender and blend until you get liquid consistency, longer you blend, the more creamy your coconut butter will be. This may take a few minutes, you should be patient. You can store butter in the refrigerator up to 2 weeks.
