I tried incredibly long to write this post and to give you new recipe. Recently, there was a lot of happening in my life and I haven’t been here for a while and I am perfectly aware of that. It is associated with an attempt to reconcile fairly intensive study (surprisingly intense as for Erasmus), fast living, traveling and generally living in another country – Croatia. In addition, recently some thoughts about my current diet came to my mind. Don’t get me wrong, I still eat healthly, I try to cook most of my meals throughout the day, I eat plenty of fruits, vegetables, and I provide myself with many vitamins, I run, do sports, and so on and so forth – it remained unchanged. But I still feel that something should be different …

Recently, my diet is almost vegan diet. Already stopped eating dairy, I limited it virtually to zero. When I was living in Poland, I was eating way too much, considering that I need more and more protein. I also ate a lot of meat, but still lean meat. I could practically eat chicken for breakfast. Because athletes need animal protein to have power and that’s the only thing that counts. If someone had told me a year ago that I would have to live without meat, I would say to him that it will never happen in my life. Here in Croatia, everything changed. Meat doesnt interest me so much and I realized that I feel much better without it (physically and mentally) in my daily diet. Certainly I have more energy and don’t feel bloated. Instead of that, I consume large amounts of carbs, good carbs.

For a long time I was thinking whether I should post here the recipe with meat. I feel less and less good with this thought, but I decided to give it a try. My less interest in animal products is due not only to health, but also ethical reasons, which is increasingly reaching me. Just to be clear, I am not fully vegan yet. As of now I am in the testing phase and I try to discover what works best for me and what is good for my stomach, body and mind. Who knows what will happen next? Maybe this blog will become fully vegan blog, or maybe the whole animal crisis will pass? One thing is certain, on high-carb diet, full of vegetables, fruits and whole grains, I feel amazing! And regarding the protein – vegetables have also quite a lot of it!

PANCAKES
  • 1 cup buckwheat flour (about 165g)
  • 1 egg
  • ¼ teaspoon salt
  • 1 cup of milk (225ml)
FILLING
  • 2 beets
  • 1 large zucchini
  • 400g chicken
  • 1 tablespoon olive oil
Wykonanie
  1. All the ingredients for pancakes blend until smooth with the consistency of thick cream. Cover the pot with a lid or wrap in foil and put in a frige overnight. After a night cut the beets and zucchini into slices and steam until soft. Fry chicken on one spoon of oil and cut into slices when slightly cooled. To prepare pancakes, remove the batter from the fridge, which layed there all night and thoroughly mix. Preheat a non-stick pan, then reduce the heat and pour 2 spoons of a cake. Quickly and carefully smear on the entire surface of the pan and fry without oil on low heat until the pancake has set. When it's cooked, flip it over and continue to simmer for less than a minute. Remove from the pan and do the same with the remaining batter. From this portion you will get about 8 pancakes. On each pancake lay off beets, zucchini and chicken, fold into a triangle and toast on a hot skillet to heat. Bon Appetit!

    Congratulations! Such changes, evolution & experimentation signify progress. Even if something ends up as failure every now and then.

    I also (almost) quit diary and I’m not that big on meat anymore and similarly if someone told me that one year ago I wouldn’t believe him.
