01 Mar Diet carrot and flax seed pizza – low-carb gluten-free pizza
This pizza will totally change your perception of pizza. It’s something completely different and magical. A friend of mine gave me this idea so I decided to also give it a try. At the beginning it seemed too good to be true and even possible. When I was preparing the dough mixture, I was not believing that It will bake. I always believe in my culinary experiments and this one certainly was not the most exotic and crazy idea I have ever had but sill, I had some doubts. Actually I could have taken a picture of my roommates from Finland and Austria, who could not understand how such paste can be transformed into pizza, I also didn’t believe that at this point.

But after 15 minutes of baking pizza crust looked pretty good and was not even falling apart, as I thought it would be. It’s hard to believe that, apart from spices, this pizza crust is made from only carrots, flaxseeds and eggs! So it’s wheat-free and gluten-free and the taste does not differ that much from the traditional version. My new flatmates really liked it so I am very proud that I faced this challenge. Thank you Marysia for inspiration, If not you, I don’t know If I would ever end up with this amazing pizza 😉

This pizza is perfect for those who try to be halthy and fit. It has very few calories, a lot of protein and plenty of fiber. Very fast and easy to prepare, this is a great option even for breakfast. Macronutrients of this pizza will delight any athlete. Surely you don’t have to worry about excess carbohydrates and fat, in contratory to the traditional version. I am pleasantly surprised! I think this pizza will often be a guest on my table. So… we can make a pizza out of carrots, flaxseed and eggs. From now on, everything is possible ?
- 200g shredded carrots
- 3 eggs
- 25g ground flax seeds (3 tablespoons)
- ⅓ teaspoon of each: dried garlic, chilli, basil and oregano
- salt for taste
- 50g tomato concantrate
- 50g BIO ketchup
- 1 carlic clove
- 1 small red onion
- 1 tablespoon olive oil
- ½ teaspoon of each: basil and oregano
- 1 tomato
- 1 mozarella
- oregano and basil for sprinkling
- Carefully whisk the eggs and add to them carrots, ground flax seeds and spices. Mix well and set aside for 5 minutes. Then pour the mixture on the flat baking surface lined with baking paper. Bake in oven heated to 200C for about 15 minutes, or until the bottom has set and won’t be liquid any more. When baked, remove from the oven.
- Chopp onions and garlic and fry with a tablespoon of oil until softened. Then add the concentrate and ketchup and blend until smooth. Add spices, stir and spread the sauce on the previously baked pizza. Then lay off your favorite toppings. In my case: sliced mozzarella and tomatoes. Sprinkle the top with oregano and basil and bake for about 10-15 minutes or until the pizza is hot and cheese is melted.
