According to me, millet is a miracle of nature. I love it in any form and at any time. Perfect for breakfast, lunch or dinner, both savory and sweet. Already some time ago I discovered that when overcooked, by it’s sticky consistency is perfectly suited for cakes and desserts. This eliminates the need to use thickeners and eggs. Cake is firm and does not disintegrate. In addition, my chocolate “cheesecake” without cheese is completely vegan and healthy. I made it when I was still on Erasmus in Croatia. My friends could not believe that this cake is healthy and said that it tastes too good to be valuable at the same time, not even said that it’s vegan. Ohh yeaaa!


I’m in love cakes without baking. They are quick to prepare, do not require as much effort and, of course, a person without the oven can easily prepare them. This recipe is one of those cakes. Its implementation is practically cooking millet, adding the remaining ingredients, blending and that’s it. It really can’t be more simple. It tastes fantastic and you certainly won’t be disappointed. I have prepared this cake in my small Croatian kitchen. Because I had no bowls, I was blending and mixing ingredients in pots, they were the only dishes we practically owned. Despite many obstacles, it all worked out, and the cake tasted great. I am sure that you certainly can do without any problems.

- 400g uncooked millet groats
- 1 liter of water
- 200g brown sugar
- 100g cocoa powder
- 2 flat teaspoon of salt
- 2 teaspoons vanilla extract
- 200 g coconut oil
- 150 g coconut oil
- 100g cocoa powder
- 100g maple syrup
- 1 teaspoon vanilla extract
- Rinse thoroughly millet groats in water and then pour 1 liter of water to it. Bring to a boil and simmer without a lid until it is completely overcooked and sticky, it will take about 20 minutes (or at least you should not boil less than 20 minutes, even if you think it is already overcooked. This is important!). NOTE not to burn the pot! Groats will be very sticky so thay will stick to the bottom of the pot - it's inevitable. However, do not add water, millet should absorb all the previously added liquid. When it's already overcooked, place it in a bowl and add the remaining ingredients: sugar, cocoa powder, salt, vanilla extract and coconut oil. Blend all the ingredients into a smooth, uniform, very thick and sticky mass. The smoother the better. Then grease with coconut oil the bottom of the pan with a diameter of 20cm and sprinkle with cocoa powder. Pour mass on such prepared pan and carefully smooth out.
- All the ingredients for the topping place in a small pot, warm up and dissolve thoroughly. Stir vigorously to combine all ingredients. Yet the glaze is warm and smooth, pour onto millet in a pan. When cooled down a bit, set aside to firm up and then place in the refrigerator overnight to thicken. Done 🙂
