Today’s recipe is fresh and light, which is ideal as a snack or lunch. Spring rolls at Asian restaurants are usually deep-fried, which unfortunately is not the healthiest. I prefer my raw and fat-free rolls. There are definitely healthier, tastier and lighter. Additionally, you can save time by skipping the traditional tossing in egg, bread crumbs and frying. They are so fresh that it makes you want to eat, moreover, their vibrant colors encourage every non-vegetable-eater.

Into your spring rolls you can put any of your favorite vegetables. I opted for the carrot, cucumber, paprica, smoked tofu, chives, spring onions, parsley, spinach and garlic chilli sauce. In addition, I prepared a spicy sauce based on peanut butter, garlic chilli sauce and soy sauce. All the aromas and flavors make real explosion in your mouth. The sweetness of vegetables perfectly harmonizes with spicy and aromatic peanut butter and herbs. Such rolls due to their compact form, you can take with you to work / school / picnic without fear that something will fall apart.

SPRING ROLLS
  • 20 sheets of rice paper
  • 4 handfuls of fresh spinach
  • 1 cube of smoked tofu (aprox. 250g)
  • 2 large carrots
  • 1 large red paprica
  • 1 raw cucumber
  • few green onions (green parts of the onions)
  • bunch of parsley
  • bunch of chives
  • garlic chilli sauce
SAUCE
  • 3 tablespoons peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon garlic chilli sauce
  • a few drops of tabasco
  • teaspoon of cane sugar

Instructions
  1. Cut smoked tofu into thin slices and fry gently in 1 tablespoon of olive oil just until golden. Then cut into thin slices carrots, peppers and cucumber. Try to cut all of the vegetables at the same length, then spring rolls will look more aesthetic and appealing. Then cut the green parts of spring onions and parsley to the length of vegetables.
  2. Soak the rice paper in warm water and place it on the board. Then put on paper 2 spinach leaves, green parts of spring onions, sliced peppers, cucumbers and carrots, a few leaves of parsley and chives, tofu and a teaspoon of garlic chilli sauce. Then fold the top and bottom part of the paper to inside and roll it up alongside in a narrow tube. Proceed until you use all ingredients.
  3. Mix all sauce ingredients until uniform and serve with spring rolls. Bon Appetit!
